Wild Zymu is a wild laboratory where Maria Fermentário finds her happiness and purpose. 

Maria has always loved learning more about food, and with a move to the countryside became increasingly interested in healthy food and the processing of surplus food.

She eventually fell in love with fermented products and that’s how she created her first Kombuchas and chucrutes.

Today, after 6 years, she decided to share her research and experiences with the world and she created a brand through which express this fermentation art – WILD ZYMU*.

*Zymu comes from the Greek Zymurgy, an applied science that studies the biochemical process of fermentation and its practical uses.

Unique Batch 

Products made from small quantities of ingredients where Maria uses her experimental creativity to create limited edition products.

With the Seasons

Products prepared when certain ingredients are in season, such as citrus jam. Stock is limited and is only restocked in the following season’s cycle.
